Bruschetta

From the Aitkins cookbook

Serves 6

3pc low carb bread
3 plum tomatoes, diced
8 lg basil leaves, thinly sliced
1 md garlic clove, pressed
6 pitted Kalamata olives
1tbs EVOO
1tsp balsamic vinegar
1/4tsp salt/pepper

Heat oven to 350*.
Remove crusts and cut in quarters.
Bake bread 5-6m until golden brown.
Combine remaining ingredients - top bread quarters with 1tbs mixture.
